This Low Fat Mushroom, Spinach and Potato Pie is extremely delicious and full flavour! If it wasn’t in the title you wouldn’t even know that the recipe wasn’t full fat its that good! As filo pastry is used this is a lovely light pie with a home hearty jam packed filling. wow 2014 Already!! Happy New Year everyone!!
Now this year for me is all about developing new ideas, recipes and trends to keep us vegetarians and (vegans) happy, healthy and interested in cooking recipes that are not only nutritionally delicious but also fresh, tasty and something to look forward to eating!!
January will consist of a few soup recipes, as they are quick to make, taste so much better than shop bought recipes and are a great winter warmer to enjoy at lunch at your desk or out on your outdoor job (lucky you).
I must admit over the festive period I found far too many veggie sweets ;-( put on a few extra pounds and feel very bloated and guilty for it!!
So to kick start me back in to a healthier routine January will be on the healthier side of things
